We’ve been making and baking this, our signature Apple Pie, for generations. The secret is in the addition of nutmeg for flavour and butter for richness. Make sure to use an apple that will hold up to baking like Northern Spy or Honeycrisp.
2/3 c white sugar
3 tbsp brown sugar
2 tbsp corn starch
1 tsp cinnamon
1/8 tsp nutmeg
1/8 tsp salt
1 tsp butter
1 1/3 lb apples – peeled, cored, and sliced
Pastry for a 9” pie bottom and top
Preheat oven to 375F.
In a large bowl, blend the sugars, starch, spices, and salt. Add the apple slices and toss gently to coat evenly. Place the slices in pastry-lined pie bottom and mound slightly toward the centre. Dot with butter, and cover with pastry top. Seal / crimp edges as desired.
Place pie on a parchment-lined baking sheet and bake (rotating halfway through cooking) for 1 hour or until pastry is evenly golden and apple juices are thickened. Let rest for at least 1 hour before slicing and serving . Enjoy!
