Drying and Roasting Pumpkin Seeds

Drying and roasting are 2 different processes.

To remove pumpkin seeds: Cut open pumpkin, scoop seeds into bowls and wash, drain in colander.

To dry: Dry in the sun (time will vary), in a dehydrator @115-120 degrees (1-2hrs), in the oven on warm (3-4hrs). Seeds should be spread flat, only 1 layer thick, stirring frequently to keep from burning.

To roast: Take dried seeds and roast in a  pre-heated 250 degree oven for 10-15 minutes. Drizzle with olive oil and sea salt before roasting if desired.
