Springridge Farm
Strawberry Pavlovas

(we prefer individual-sized pavlovas so that we can serve them family-style with a big bowl of sugared strawberries and another bowl of softly whipped cream.  That way, everyone can build their own perfect pavlova.)

4 large Ontario egg whites
1 cup  + 2 tbsp sugar
1 tsp cornstarch
½ tsp vanilla extract
1 tsp white wine vinegar
3 cups Springridge Farm strawberries
1 cup 35% cream

Preheat your oven to 350F.  In a stand mixer or using an electric mixer, whisk the egg whites until soft peaks begin to form.  Sprinkle in ¾ cup of the sugar and continue to whisk on medium-high speed until stiff and shiny.  On low speed, mix in cornstarch, vinegar, and vanilla just to blend.  Line a baking sheet with parchment paper and spoon out meringue into 8 mounds.  Place in oven and immediately turn down the heat to 300F.  Bake 30 minutes, turn off heat and leave in oven 20 more minutes.  Remove and allow to cool.  Slice berries and sprinkle with ¼ cup sugar, set aside.  Whip cream with remaining 2 tbsp sugar.  Serve buffet-style and let everyone assemble their own perfect pavlova.  Fantastic!
