Springridge Farm
Farmhouse Potato Salad

1 ½ lb Ontario red potatoes
8 thick slices double smoked Ontario bacon
1 cup mayonnaise
1 cup sour cream
¼ cup fresh Ontario chives (chopped)
¼ cup Springridge Farm Dill Seasoning

Scrub potatoes, slice in ½ and place in a large pot of salted water.   Bring to a gentle boil and reduce heat just to simmer potatoes until barely tender.  Drain and cool.  Cook bacon and dice.  In a large bowl, combine mayonnaise, sour cream, chives, and dill seasoning.  Add potatoes and bacon, toss to coat.  Let sit at least 4 hours before serving.
